Crafted the wild way
Carbonic Maceration: an experimental method most coffee never sees. Whole cherries ferment in CO₂-flooded tanks, a trick borrowed from winemaking. It coaxes out vivid, often boozy fruit and an unmistakable character. Only about 10% of the coffees we track are made this way.
