Carbonic Maceration — an experimental method most coffee never sees. Whole cherries ferment in CO₂-flooded tanks — a trick borrowed from winemaking. It coaxes out vivid, often boozy fruit and an unmistakable character. Only about 11% of the coffees we track are made this way.
