Crafted the wild way
Double Ferment, Thermal Shock, Decaf: an experimental method most coffee never sees. The caffeine is removed before roasting, ideally gently with water (Swiss Water) or sugarcane (EA) rather than harsh solvents. Done carefully, the character of the origin stays almost untouched. Only about 10% of the coffees we track are made this way.
