24H Underwater Fermentation, 24H Anaerobic Fermentation, Pulped & Dried on Raised Beds: an experimental method most coffee never sees. Skin off, mucilage on and dried with the bean, Brazil's signature. It yields a sweet, soft, low-acidity coffee, the backbone of countless espresso blends. Only about 10% of the coffees we track are made this way.
