“After picking, the cherries are put into fermentation for 24 hours. Then, the cherries are de-pulped and the parchment is put into fermentation tanks where it is dry fermented for 24 hours. Next, the parchment is rinsed in the tank with a lot of water 3 times. Last, it is put inside the parabolic solar dryer for around 20 days, during this time, the parchment is sorted by hand to remove defective beans.”
